So I have been reading up on my Probiotics and Prebiotics, and with doing so rediscovered leeks! They are packed with a ton of heathy vitamins and nutrients and aid in digestion! Since we aren’t eating potatoes, I created my own soup recipe! It was amazing! Warning: this makes a bunch of soup!
Here is what you will need:
- 20 cups of water
- 4 Tablespoons of Chicken Bouillion
- 1/2 Cup Of Minced Garlic
- 1 Siced Onion
- 2 Tablespoons of Pepper, Paprika, Dill & Turmeric
- 1 Tablespoon Oregano and Parsley
- 8 Ounces Crimini Mushrooms
- 10 Ounces Tuscan Kale
- 6 Leeks
- 2 Cups Of Celery
- 9 Sausage Links
- 1/2 Cup Of Coconut Oil
- 1 Cup Of Heavy Cream
- 2 Whole Avocados

Step 1: Sautee the garlic and onions.

Step 2: Fill a Large pot with water and Bouillion. Add in the sautéed garlic and onions. Once that starts to boil add in the Celery, Kale, Mushrooms, and seasonings.

Step 3: Dice the sausage. Heat the coconut oil in a sautée pan and fry the sausage. Once fried, set to the side.
Step 4: Wash and prepare the leeks. Once they are cleaned, add them into the soup.

Step 5: Continue to cook on medium heat until ready to serve.

When ready to serve, stir in the heavy cream? scoop out two cups of soup. Top with 1 cup of diced sausage and 1/2 diced Avocado.

This recipe made 12 servings. Each servings contains 342 calories, 29 Grams Of Fat, 10 Grams Of Protein, and 12 Net Carbs.
