Keto Roasted Brussel Sprouts

I find that one of the hardest things about eating Keto is the variety of the meals and balancing your veggies. Veggies typically are very high in carbs, so it’s important to balance them out with fat and to eat them in small portions. In our house we LOVE Roasted Brussel Sprouts, to the point of them being a little burnt. This morning I turned some yummy Brussels into a tasty one pan breakfast! 


Here is what you will need (for 3 servings):

  • Brussel Sprouts, 12 Ounces, Shaved
  • 8 Slices of Bacon, Chopped
  • 1 Avocado
  • 1/2 Cup Of Coconut Oil
  • 6 Eggs
  • 1/2 Teaspoon Salt
  • 1 Teaspoon Pepper
  • 1 Teaspoon Tumeric
  • 1 Teaspoon Paprika 
  • Rep Pepper Flakes, Optional

Step 1: Sautée the Brussel Sprouts in 1/2 cup of coconut oil. 


Season with salt, pepper, tumeric, and paprika. While the Brussels are cooking, preheat the oven to 450 degrees Fahrenheit. 


Step 2: Once the Brussel Sprouts are a dark green color, transfer them to a pan. Bake for about 15 minutes. 


Step 3: While the Brussel Sprouts are baking, start frying he bacon. I say this is a one pan meal because I used the Brussel Sprout pan for the bacon. This helps cut down on the dishes! Once the bacon is nice and crispy (and cool) chop it up and put it to the side. 


Step 4: when the Brussels are nice and Roasted, divide them into your serving bowls. 


We have 3 people in our house so that’s how it was divided. This will easily make 4 smaller servings or 2 larger servings. Top the Brussel Sprouts with the chopped bacon. 

Step 5: Fry the eggs! I had planned on cooking them in the bacon grease, but last minute switched to Avocado oil because I wanted to use the bacon grease for dinner tonight. 


When the eggs are cooked to your liking, place them on top of the Brussel Sprouts and Bacon. Then top with Avocado and Crushed Red Peppers!  


This breakfast was so filling and delicious! This will be one of our staple Keto meals!
