I discovered cauliflower rice at Trader Joe’s about a year ago and instantly fell in love! As quickly as I became obsessed with it, I realized how often it is out of stock. Apparently everyone else has the same affair with this fantastic rice alternative, so I did some digging and discovered it is extremely easy to make. You just need some fresh cauliflower and a blender (or food processor). We have a Blendtec and it makes perfect cauliflower rice each time. 
Through trial and error I have learned that it is important to blend it in smaller batches. I would say a safe amount it about a cup at a time. Anymore and it will jam under the blades and it gets super annoying, super fast! 
You are looking for a chopped consistency that resemble granules of rice. Once the entire cauliflower is processed, toss it into a pan with about a cup of bone broth (you can use water or any broth of your preference, season with salt and pepper, cover with a lid, and steam on high.
The cauliflower should could in about 5-10 minutes. You don’t want to overcook it as it will get super soggy, so I generally turn the stove off once everything is steaming and hot throughout. The final step is to plate it like regular rice.
We have used cauliflower rice as a rice substitute for curry chicken, stir fry’s, and on Taco Tuesday in place of traditional spanish rice. I hope you enjoy!
