Gnocchi was a very foreign food for me. I do not remember having ever tried it and I definitely have never made it. With that being said, this is now one of my favorites! The Gnocchi was very filling and the prosciutto, spinach, and white beans added fabulous texture and flavor.
Here’s what you will need to make this delicious dish:
- 1 – 17.6 Ounce Package of Gnocchi (Hint: You will find this in the pasta aisle)
- 5 Ounces of Fresh Spinach
- 1 – 15 Ounce Can Of White Beans (Drained & Rinsed)
- 4 Ounces of Diced Pancetta
- 1/2 Cup of Sun Dried Tomatoes
- Freshly Grated Parmesan Cheese (For Garnish)
- Extra Virgin Olive Oil
- Red Pepper Flakes
- Salt & Pepper
Step 1: Heat the Extra Virgin Olive Oil in a pan over medium heat. Toss in the diced pancetta and let brown, stirring occasionally.
Step 2: Add the gnocchi to the pancetta,and sprinkle with salt, pepper, and red pepper flakes. Stir occasionally and continue to cook until they are golden and slightly crispy.
Step 3: Add in the white beans, spinach, and sun dried tomatoes. Stir until the spinach is wilted and everything is heated through.
Step 4: Add additional salt, pepper, and red pepper flakes as needed for pleasing your taste buds.
Step 5: Serve with freshly grated parmesan cheese.

All of the ingredients I purchased at Target (I was already there and did not want to make a second trip to the grocery store) which makes this a perfect weeknight meal when you are short on time!
We paired the Parmesan Gnocchi with pan seared chicken, roasted carrots, and the Cupcake Vineyards Malbec.
