I have never been a big fan of lamb. I could take it or leave it. However, yesterday our grocery store had lamb on sale so I figured I would give it another try. It was delicious! It is definitely going to make it into our dinner rotation and the best part is it was keto friendly, low carb, and gluten free! 

Here is what you will need! 

  • Lamb Chops
  • Butter
  • Salt
  • Pepper

Step 1: Season both side of the lamb with Salt and Pepper. Or whatever spices you desire.

Step 2: Melt the butter in the pan over a medium-high heat.

When it comes to butter I try to get Kerrygold or Danish Creamery. I just think it has a richer flavor. 

I split my lamb Chops into two pans, because I had so many, and used half a stick of butter per pan.

Step 3: Once the butter was melted and sizzling I tossed in the lamb chops.

We like our meat rare to medium rare, so I cooked each side about 3-4 minutes. How long you cook it will depend on your person preference. 

The lamb was so fragrant that the dogs never left the kitchen! 

I served them with Roasted Okra. It was delicious!

I also Whipped up a creamy horseradish dressing to top the Lamb Chops. 

To make this dressing you will need:

  • 1/4 Cup Of Prepared Horse Radish
  • 1/8 Cup Of Mayonnaise 
  • Salt
  • Pepper
  • Tabasco 
  • 2 Tablespoons Of Lemon juice

I mixed all of these together in a little bowl and just spooned it on top of the Lamb Chops. I love love love spicy food so this sauce was perfect! 

And of course, I paired my dinner with a red wine. A Malbec which is not Keto, but makes cooking a little more fun!
