Peppermint Cocoa Cookies

This year I was going to give Santa a variety of cookies, but there Peppermint Cocoa Cookies are so good, that there might not be any left when he arrives! 

Here is what you need to make these tasty treats!

  • 1/2 Cup of butter 
  • 1/2 Cup of sugar 
  • 1/2 Cup of brown sugar 
  • 2 Eggs 
  • 1 Teaspoon of mint extract
  • 1 1/2 Cups of flour 
  • 2/3 Cup of cocoa 
  • 1/4 Teaspoon salt
  • 1/4 Teaspoon baking powder
  • 1/4 Teaspoon baking soda 
  • 1 Box of Junior Mints

Step 1: Preheat the oven to 350 degrees 

Step 2: Cream together the butter and both sugars. Add in 1 egg at a time and continue mixing. Next, mix in the mint extract. 

Step 3: in a separate bowl, combine the flour, salt, baking soda, and baking powder.

 In 1/2 Cup increments, add the dry mixture to the the butter mixture, until it is all blended. Refrigerate for 20 minutes. 

Step 4: Butter hands, and roll the dough into 1 inch balls. Place on a cookie sheet, lined with parchment paper. 

(We added some sprinkles as well)

Step 5: Bake for 10 minutes. Allow to cool for 5 minutes, and then press the Junior Mint into the center of the cookie. 

Step 6: Move the cookies to a cooling rack and your done! 

These cookies are seriously delicious! Great for gifting or binge eating!
