Keto Cream Cheese Waffle

I essentially created a waffle-omelette hybrid and I am not upset about it! This little Waffle may not be super pretty but it is savory and delicious! 


Here is what you will need to make 4 waffles:

  • 4 Eggs
  • 4 Tablespoons Of Mayonaise
  • 1 Tablespoon of Vanilla Extract 
  • 1 Tablespoon Of Almond Flour
  • 2 Tablespoons Of Cream Cheese, Diced. 


Step 1: Combine the eggs, almond flour, mayonaise and vanilla extract in a food processor or with a hand mixer. 


Blend until it is creamy. 


Step 2: Either spray or rub coconut oil onto the waffle iron to ensure the Waffle comes out easily. Then pour half of the batter onto the iron and top it with half of the Cream Cheese. These little Cream Cheese nuggets will create warm pockets of melted cheese in the end! 


Now I was not prepared for how puffy this Waffle would turn out. Within about 30 seconds it quadrupled in size! 


Once both sides are crispy it is time to take it out. 


Since our Waffle iron is a little larger, I just made a full size Waffle and cut it in half, which made 2 servings. This also saved on some cook time!

I topped ours with butter, cinnamon, and fresh Berries. But the options are endless! It’s not the prettiest Waffle, but it is very delicious!
