I’m all about wasting the least amount of food as possible. With that being said, three meals with the same slow cook beef can get a little repetitive. After Ropa Vieja and Ropa Vieja Tacos, we were down to our last little bit of beef. I Scrambled some eggs and threw it in there! The boys really enjoyed it for breakfast!
Here is what you will need:
- 1 Cup Of Ropa Vieja (shredded beef)
- 6 Eggs
- 2 Tablespoons Of Coconut Oil
- 1/2 Avocado, Diced
- 1/2 Cup Shredded Pepperjack Cheese
Step 2: Add in the shredded beef and eggs. Stir until both are thoroughly cooked.
Step 3: Divide into two bowls, top with the cheese and diced Avocado. (I also added a scoop of salsa)
