Bacon Wrapped Chorizo Jalapeños

Full disclosure… I cheated with these delicious jalapenos! Our Safeway had them prepackaged and all I had to do was wrap them in bacon. And boy were they delicious! I paired the Jalapeños with or Keto “Taco Shells” and leftover Ropa Vieja and it made a delicious and filling dinner. 

Here’s what you will need: 

  • 3 Jalapeños 
  • 6 Ounces Of Chorizo (Pork, Beef, or Chicken)
  • 6 Strips Of Bacon

Step 1: Cut the jalapeños in half and remove the seeds. 

Step 2: Fill each jalapeño half with an ounce of raw Chorizo. 

Step 3: Wrap a piece of bacon around the jalapeño. I used a tooth pick to hold the bacon in place. 

Step 4: Bake for 20-30 minutes at 400 degrees farenheit, until you reach your desired level of crispy for the bacon.

These were extremely easy to make and if you can find the jalapeños prestuffed they are even easier! 

Each jalapeño has 124 Calories, 10 Grams Of Fat, 8 Grams Of Protein, and 1.5 Net Carbs.
