
It’s no surprise that the weather gets super warm in Phoenix during the summer. This means we usually end up grilling quite a bit and eating cold, refreshing salads. However, with this Romain Lettuce/E-Coli outbreak I am not taking any chances. So, our salads are getting creative! Last night I made quite possibly the easiest salad ever. Everything was pre-chopped so I just had to combine it and whip up the dressing.
Here is what you will need:
- 1 10.7 Ounce Package Of Spiralized Beets
- 6 Pieces Of Uncured Bacon
- 1 6 Ounce Package Of Blueberries
- 1 4 Ounce Container Of Goat Cheese
- Balsamic Dressing

Step 2: Distribute amongst your bowls. I made 3 servings, but this could easily make 4.

Step 3: Top with the dressing and serve!

It seriously is that easy! And it’s packed full of nutrients. Beets are extremely good for your cardiovascular health and they are also high in Vitamin B Folate, which is good for those who are pregnant or trying to conceive. Blueberries are packed full of antioxidants that help fight free radicals and keep your cells healthy!
I served this with pork chops and sautéed cauliflower.
