I love love love Mac & Cheese but I don’t love all of the carbs in the noodles. This Cauliflower Mac & Cheese gives you the Mac & Cheese flavor without the carbs!
Here is what you will need:
- 1 Large Cauliflower, chopped into bite sized pieces
- 1 Cup of Heavy Cream
- 2 Tablespoons of Dijon Mustard
- 3 Cups of Shredded Cheese ( I used 1 Cup of Swiss, 1 Cup of White Cheddar, 1 Cup of Goat Cheese)
- 1 Head Of Garlic
- 2 Tablespoons of Almond Flour
- Salt and Pepper to taste
Step 1: Chopped the Cauliflower into bite sized pieces and place in a greased baking dish. I used a little Olive Oil to grease my dish.
Step 2: Chop the head of garlic and sautée on a low heat.
Step 3: Add in the Heavy Cream, Dijon Mustard, Almond Flour, Cheese, Salt, and Pepper. Continuously stir, until all of the ingredients are melted together and have formed a thick sauce.
Step 4: Pour the cheese sauce over the cauliflower. Bake at 350 degrees Fahrenheit for 30-45 minutes.
You can add in extra spices, change up the cheeses, and use less garlic. We just love garlic!
