These little cookies are so yummy! My intentions were to gift them, however, we ended up eating them all. If that doesn’t say how good these Christmas cookies are, I don’t know what will!
Here is what you will need to make Christmas Snowball Cookies:
- 4 Cups of All-purpose Flour
- 3 Cups of Confectioners Sugar
- 10 Tablespoons of Granulated Sugar
- 1/2 Teaspoon salt
- 4 Teaspoons Vanilla Extract
- 1 Teaspoon Almond Extract
- 4 Cups of Walnuts
- 2 Cups of Unsalted Butter

Step 1: Cream together the butter and sugar. Beat in the vanilla and salt while gradually adding in the flour.
Step 2: Chop the walnuts. I chopped mine using the Blendtec on the lowest setting. Once chopped, I added them to the dough and continued mixing.

Step 3: Split the dough in half, place in bowls, cover, and refrigerate for 1 hour.

Step 4: While the dough is chilling, preheat the oven to 350 degrees. Line a baking sheet with parchment paper and set aside. Next, place the confectioners sugar in a bowl and set to the side.
Step 5: Using the palms of your hands, smooth the dough into one inch balls.

Step 6: Place the dough on the baking sheets about 1 1/2 inches apart. Bake until the cookies begin to brown, about 12-14 minutes. (Do not over bake, the bottom of the cookies should be lightly browned but the tops should not crack).
Step 7: Cool the cookies on a baking rack for 2 minutes. While the cookies are still warm, roll in the confectioners sugar, and place back on the cooling rack.
